INGREDIENTS:
- 1/2 cup butter
- 1/2 cup white sugar and 1/2 cup brown sugar
- 1 egg
- 1 cup Mango Puree
- 1 whole Fresh Mango, peeled and cut in cubes
- 1 cup white chocolate chips
- 1 tsp. Baking soda
- 1 tbsp. warm water
- 1 1/2 cup unbleached all-purpose flour
- 1 tsp. vanilla
- 1 tsp. Baking powder
- 1 tsp salt
- 1 cup chopped cashew nuts
PROCEDURE:
- Preheat oven to 375 degrees.
- Cream butter and add both brown and white sugar.
- Dissolve 1 teaspoon soda and 1 teaspoon salt in 1 tablespoon warm water, and then add this to your one cup mango puree. Add this to the creamed butter mixture.
- Add egg and beat at low speed.
- Still at low speed, beat in vanilla. Then stir in chocolate chips and fresh mango cubes. Add chopped cashew nuts.
- In a separate bowl, sift together flour and baking powder. Add this to your creamed mixture at low speed until fully incorporated.
- Grease your loaf pans with butter or oil, then dust with flour. You can also choose to line your loaf pans with parchment paper, wax paper, or baking paper. Make sure that all sides are properly covered to ensure easy removal of cooked loaves.
- Fill pans 2/3 of the way with the batter. Tap pans on counter to remove air bubbles and to ensure that these are evenly spread in the pan.
- Once all pans are full, bake at 375 degrees for 30 to 45 minutes.
- Turn halfway through the baking time to ensure that these bake evenly.
- Cool on baking racks before removing from pans.
