lemon butter salmon

Ingredients:

  • 5 thick salmon fillets or steaks
  • 2 teaspoons fresh garlic, minced
  • 1/2 cup butter, cut into cubes while chilled
  • 6 tablespoons lemon juice
  • 2 teaspoons salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon hot pepper sauce (optional)

Directions:

  1. In a small pan, saute garlic in butter until melted and garlic is slightly golden. Whisk in the lemon juice then add salt and pepper. Add in pepper sauce and mix well. Set aside.
  2. Preheat home or bakery oven to broil temperature (about 500F).
  3. Place salmon on a greased glass baking pan and drizzle with some of the lemon butter you just made.
  4. Put in oven and broil your salmon 4-6 inches from the heat source. Do this for 10-15 minutes or until fish is done but not dry. Serve with reserved lemon butter.
  5. For better presentation, prepare lemon butter ahead of time and chill in a ramekin. To serve on fish (or on other types of grilled or broiled meats), simply form a quenelle using two spoons or scoop using a small ice-cream scooper and place on the warm meat. Garnish with chopped parsley or fresh basil.
