INGREDIENTS:

Cupcake

  • 1 1/2 cups cake flour
  • 1 cup white sugar
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup butter cut in cubes, room temperature
  • 1 large egg, room temperature
  • 2 large egg yolks, room temperature
  • 1 1/2 teaspoons vanilla extract
  • 1/2 cup sour cream or plain yogurt, room temperature

Fudge Frosting

  • 1/2 cup unsweetened chocolate chopped coarsely
  • 2/3 cup butter, room temperature
  • 1 1/3 cups powdered sugar, sifted
  • 1 1/2 teaspoons vanilla extract

PROCEDURE:

Cupcake

  1. Preheat your home or bakery oven to 350 degrees Fahrenheit or 177 degrees Celsius, and line 12 muffin cups or a cupcake pan with paper liners.
  2. In the bowl of your cake mixer, combine the flour, sugar, baking powder, and salt.
  3. Next, add the butter, egg, egg yolks, vanilla extract, and sour cream.
  4. Beat your wet and dry ingredients together at medium speed until the batter is smooth. Do not overmix.
  5. Fill cupcake liners evenly with the batter and bake for about 20 -25 minutes.
  6. Remove from oven and place on a wire rack to cool. Once the cupcakes have completely cooled, frost with icing.

Choco Fudge Frosting

  1. Melt the unsweetened chocolate in a double boiler or in a heatproof bowl placed over a saucepan of simmering water.
  2.  Remove the melted chocolate from the heat and let it cool to room temperature.
  3. In the bowl of your electric mixer, beat the softened butter until smooth and creamy. Add the sugar and beat the mixture until it becomes light and fluffy. Add the chocolate and vanilla extract, then beat this on speed until thoroughly mixed. Increase mixer speed and beat until your choco fudge frosting is smooth and glossy.
  4. Makes a dozen cupcakes.
