Did you know that you can actually make great tasting bread out of potatoes? If you have leftover potatoes from last night’s meal, or some mashed potatoes that your kids did not finish eating, you can actually use these (along with a few more freshly peeled and boiled ones) to create a unique yet filling type of bread. Here is the recipe for this.

INGREDIENTS:

  • 1 cup mashed potatoes
  • 3/4 cup water
  • 2 tablespoons butter, softened
  • 1 teaspoon salt
  • 2 1/2 tablespoons granulated sugar
  • 2 teaspoons dry active yeast
  • 3 1/2 cups bread flour

PROCEDURE:

  1. Attach your dough paddles to your stand mixer and put in all the wet ingredients in the mixer bowl. Mix until thoroughly incorporated. Add the dry yeast, and mix again.
  2. In a separate bowl, sift together all the dry ingredients.
  3. Slowly add your dry ingredients into the wet ingredients, and check to see if the dough is soft and elastic before turning onto your floured surface for kneading.
  4. Knead the dough only until it comes together and is sticky. Do not overknead or your bread will be tough and dry.
  5. Place your dough in a bowl, cover with plastic wrap, and allow to rise for at least 20 minutes. When the dough is double in size, punch it down, then let it repeat its rising process.
  6. After your dough has risen a second time (it should be double its original size), divide evenly into half and form into loaves. Place these into greased loaf pans and set aside to rise one last time.
  7. Preheat your oven to 350 degrees F while the dough is rising in the loaf pans. After 20 minutes, place your bread pans in the oven and bake your potato bread for 30 minutes, or until these are golden brown.
  8. Remove from the oven and let cool on wire racks. These loaves are moist and dense, and are great for toast and sandwiches.  Cut only when cooled to retain the moisture of the bread.
