Chicken and Bread Casserole

While most people may think that having an oven, whether it is a home oven or a bakery oven, means that you should bake cakes, cookies, and bread, what they might not realize is you can also bake savory food in it. While we do focus on baking stuff with flour in it most of the time, there are instances when we do try our hand at something new.

Here is a recipe for something unique, since it incorporates both savory and bread in one delicious dish.

INGREDIENTS:

  • 1 small onion, chopped
  • 1 cup cooked green peas
  • 1 1⁄2 teaspoons unsalted butter
  • 1 kilo cooked and chopped chicken breasts or boneless chicken thighs
  • 1 1/2 cup cream of chicken soup
  • 1⁄2 cup real mayonnaise
  • 1 cup whole milk
  • 1⁄2 cup chopped red bell peppers, cooked in butter
  • 1 1⁄2 cups shredded cheddar or quickmelt cheese
  • Dinner rolls, or any bread you may have

DIRECTIONS:

  1. Preheat your home or bakery oven to 350 degrees Fahrenheit.
  2. Grease the sides as well as the bottom an 11×7 inch glass baking dish
  3. Heat some butter in a non-stick pan and saute your onions until transluscent and tender. Add the peas and cook a bit more. Place this in a bowl.
  4. Next add to your cooked onion and peas, the chicken soup, chopped cooked chicken, whole milk, cooked bell peppers, and mayonnaise and mix well.
  5. Place the chicken mixture into your prepared baking dish.
  6. Bake this in your preheated oven for around 15 minutes, then remove.
  7. Take your cheese and spread 1 cup of this on top of the mixture.
  8. Place your bread on top of this, enough to create a single layer. Spread the remaining cheese on top of the bread layer and return the casserole to the oven.
  9. Let this bake for another 15 to 20 minutes, or until the bread on top becomes crusty and the sauce is rather bubbly.
