INGREDIENTS:
- 1/2 cup butter (or margarine)
- 1/2 cup white sugar and 1/2 cup brown sugar
- 1 egg
- 1 cup mashed ripe bananas
- 1 cup chocolate chips
- 1 tsp. Baking soda
- 1 tbsp. warm water
- 1 1/2 cup unbleached all-purpose flour
- 1 tsp. vanilla
- 1 tsp. Baking powder
- 1 tsp salt
Procedure:
- Preheat oven to 375 degrees.
- Cream butter and add both brown and white sugar.
- Dissolve 1 teaspoon soda and 1 teaspoon salt in 1 tablespoon warm water, and then add this to your one cup mashed bananas. Add this to the creamed butter mixture.
- Add egg and beat at low speed.
- Still at low speed, beat in vanilla. Then stir in chocolate chips.
- In a separate bowl, sift together flour and baking powder. Add this to your creamed mixture at low speed until fully incorporated.
- Line your cupcake pans with paper cupcake liners. This keeps your cupcakes moist.
- Using an ice-cream scoop, put even amounts of batter into each paper liner, making sure these fill up 2/3 of the way.
- Once all liners are full, bake at 375 degrees for 12-15 minutes.
- Remove cupcakes from oven once these are done, and cool. Top with your favorite icing, or serve as is.
