One of the latest trends in diets these days is to use flour that is low carb and gluten free. The most popular flour that is used for creating low carb breads and pastries is almond flour. Another popular option is coconut flour. While both do have a flour-like consistency, these do not have the same fine texture as regular flour. It can however still give you bread and pastries that are great for low carb diets like keto and paleo.
Ingredients
- 1 1/2 cups fine almond flour
- 1/3 cup flaxseed meal
- 4 whole eggs, room temperature
- 1/4 cup unsweetened almond milk
- 2 tsps. olive oil
- 2 tsps. Non-aluminum baking powder
- 1/2 tsp. salt
Directions
Preheat your home or bakery oven to 350F or 175 C. Line a standard loaf pan with parchment paper. Set aside.
In a bowl, combine almond flour, baking powder, salt, and flaxseed meal. Set aside.
In another bowl, mix together the eggs, almond milk, and olive oil.
Next, combine the wet and the dry ingredients until a smooth dough forms. There is no need to knead this dough since it is not a yeast-type dough. Once you get the right consistency, place dough into the prepared loaf pan.
Place in your preheated oven and bake until the top of the loaf is golden brown. This should take around 40 minutes.
This bread won’t rise as much as conventional loaves, so take note of the color and the time to ensure proper baking.
Remove loaf from the oven once done and cool in the pan for about 10 minutes.
Remove from pan and transfer to a wire rack to cool completely.
