Ingredients:
- 1 cup butter, room temperature
- 1 cup granulated white sugar
- 1 egg, room temperature
- 2 2/3 cups all-purpose flour
- 2 teaspoons vanilla extract
- 1/4 teaspoon salt
DIRECTIONS:
- In your bakery mixer’s mixing bowl, cream the butter. Slowly add the white sugar and beat until the mixture is light and fluffy.
- Beat in the egg, and then the vanilla. Mix until incorporated.
- In a separate bowl, sift flour and then add the salt.
- Slowly add the flour into stir into butter mixture. Remove bowl from your mixer, and cover with plastic wrap. Place in the refrigerator and chill for at least one hour.
- Chill cookie sheets at the same time as your dough.
- Before baking, preheat oven to 400 degrees F or 200 degrees C.
- Remove dough from refrigerator and measure dough with the use of small ice-cream scoop, one for each cookie.
- Line cookie sheets with parchment or baking paper, and place cookie rounds on these cooled sheets. Press each cookie down with the use of a fork. Sprinkle top with granulated sugar if desired.
- Bake your butter cookies for 8 to 10 minutes in your preheated home or bakery oven, or until lightly golden.
- Remove your butter cookies from the cookie sheets and cool these on wire racks.
